How to Cook Scallops in the oven

Let’s face it people either love or hate scallops.  Most of the hate comes from not being able to successfully cook scallops.  Scallops can be very tricky to cook.  Sea Scallops do not need to be cooked long.  Overcooking them is a common mistake and can ruin the experience and texture.  A common way to cook scallops is to sear them.  Getting the pan very hot and doing a quick sear for 3-4 minutes on each side is a great and fast way to cook scallops.  Another common mistake is trying to cook scallops from frozen or not thawing them out all of the way.  Scallops retain a lot of water and patting them dry can help out the cook process a lot.
